Zwarte-ogen (black-eyed peas; Vigna unguiculata subsp. unguiculata) are legumes native to Africa and widely cultivated across warm and temperate regions. These small, cream-colored beans are distinctly marked by a characteristic dark spot or "eye" on the hilum (seed attachment point), which gives them their common name. The beans have a mild, slightly earthy flavor and tender texture when cooked. Black-eyed peas are particularly prevalent in Southern American cuisine, West African cooking, and Mediterranean traditions.

Botanically classified as pulses (dried seeds of legume plants), zwarte-ogen belong to the Fabaceae family and have been cultivated for millennia. The plant is drought-tolerant and nitrogen-fixing, making it valuable in subsistence agriculture. Varieties vary slightly in size and the prominence of the characteristic dark spot, but the culinary properties remain consistent across cultivars.

Culinary Uses

Zwarte-ogen are a staple ingredient in Southern American cooking, particularly in Creole, Cajun, and soul food traditions, where they are prepared as classic dishes like Hoppin' John (combined with rice, onions, and pork). In West African cuisine, they appear in fritters, stews, and rice-based dishes. They are also featured in Mediterranean vegetable stews and Indian dal preparations. The beans are versatile: they can be boiled, mashed into spreads, ground into flour, or added to soups, salads, and grain bowls. Zwarte-ogen cook relatively quickly (45-60 minutes without soaking) compared to other dried legumes and absorb flavors well, making them excellent vehicles for seasoning blends.
