The yellow pepper is the mature fruit of Capsicum annuum, a plant species in the nightshade family native to Central and South America. Yellow peppers are the fully ripened form of the pepper plant, developing their characteristic color and sweeter flavor profile as they mature on the vine—a process that takes several weeks longer than harvesting at the green stage. They feature a thick-walled, glossy exterior with a blocky, three- or four-lobed shape, smooth skin, and a hollow interior containing flat seeds. The flavor is distinctly sweet with subtle fruity and slightly grassy notes, lacking the heat of chili peppers and offering a milder, more delicate profile than their red counterparts.

Yellow peppers are grown commercially worldwide, with major production in Spain, Hungary, China, Turkey, and the Netherlands. Cultivars commonly used for market sale include "Sweet Gold," "Solaris," and "Fyesta," each selected for yield, flavor, and shelf-stability.

Culinary Uses

Yellow peppers are versatile vegetables used raw and cooked across numerous culinary traditions. Raw, they are sliced into salads, crudités, and sandwich fillings, where their sweetness and crisp texture provide freshness and visual appeal. When cooked, they are sautéed, roasted, grilled, stuffed, or braised in preparations ranging from Spanish sofrito bases to Hungarian paprika-forward dishes. They feature prominently in Mediterranean cuisines—particularly Spanish, Italian, and Greek—where they appear in paella, ratatouille, peperonata, and fajitas. Yellow peppers pair well with olive oil, garlic, onions, cumin, and smoked paprika.
