Yellow Chartreuse is a liqueur produced by Carthusian monks at the Chartreuse monastery in the French Alps since 1740. It is an herbal spirit made from a secret formula containing 130 aromatic plants, fruits, and spices macerated in alcohol and aged in oak barrels. The liqueur has a pale golden-yellow color, ranging from bright yellow to deeper amber depending on age and production conditions. Its flavor profile is complex and aromatic, with pronounced notes of honey, saffron, anise, citrus, and alpine herbs, with an alcohol content of 40% ABV. Yellow Chartreuse is sweeter and less intensely herbal than its counterpart, Green Chartreuse, with a smooth, warming finish on the palate.
