Canned chickpeas are pre-cooked, pressure-sealed specimens that have been blanched, cooked until tender, and preserved in a brine solution (typically water with salt and sometimes calcium chloride as a firming agent). They retain the characteristic nutty flavor and creamy texture of the dried legume while offering convenience and consistent quality. A standard 16-oz. can contains approximately 1.5 cups of drained chickpeas and is shelf-stable for 2–5 years when unopened.
