Rich in niacin (vitamin B3) and lime-treated hominy offers superior bioavailability of nutrients compared to untreated corn. Good source of carbohydrates and provides dietary fiber.

About

Hominy is corn kernels that have been treated with an alkali, traditionally lime (calcium hydroxide), in a process called nixtamalization. This ancient Mesoamerican technique removes the hard outer hull and germ, and chemically alters the corn to make niacin bioavailable and improve nutritional profile. White hominy is made from white corn varieties and consists of the soft, swollen endosperm after processing. The kernels are notably larger and whiter than whole corn kernels, with a mild, slightly sweet flavor and tender, starchy texture.

Culinary Uses

Hominy is fundamental to Mexican and Central American cuisines, most famously featured in pozole, a celebratory stew where hominy forms the textural base and is combined with meat, chiles, and aromatics. It is also common in Southern U.S. cuisine, where it may be creamed, fried, or served as a side dish. In addition to pozole, white hominy appears in menudos, tamales, and breakfast dishes. The ingredient's neutral flavor and tender texture make it compatible with bold spices, acidic components like lime juice, and rich broths.
