Vermouth is a fortified wine infused with botanicals, primarily herbs, spices, and roots, that originated in medieval Europe and developed into a defined category in 18th-century Italy and France. The base wine is typically white or occasionally red, fortified with neutral spirits to raise alcohol content to 15-18% ABV, then macerated with a proprietary blend of botanicals such as wormwood, chamomile, cardamom, cinnamon, cloves, and citrus peel. Two main styles dominate: dry vermouth (French), which is pale, herbaceous, and less sweet; and sweet vermouth (Italian), which is darker, richer, and contains added sugar or caramel. The term derives from the German "Wermut" (wormwood), which was historically its defining botanical.

The flavor profile varies significantly between styles but characteristically combines herbal, aromatic, and slightly bitter notes with underlying wine complexity. Premium vermouths showcase nuanced botanical profiles, while mass-produced versions rely on more standardized formulations.

Culinary Uses

Vermouth functions as both a cocktail ingredient and a cooking ingredient. In mixology, dry vermouth is essential in martinis, Negronis, Manhattans, and countless classic cocktails, where it provides herbaceous depth and bitterness. Sweet vermouth is featured in drinks such as Manhattans, Martinis rossos, and Negronis. In the kitchen, vermouth is used to deglaze pans, enhance pan sauces for fish and poultry, and build flavor bases for vinaigrettes and reductions. A wine-glass measure (approximately 4-6 oz) is suitable for deglazing or as a cooking liquid for shellfish, vegetables, and light proteins, where its botanicals impart complexity without overwhelming delicate flavors. Both styles are shelf-stable once opened for several months when kept sealed and stored in a cool place.
