The flour possesses a tan to light brown color, a slightly nutty and earthy flavor profile, and a denser, coarser texture than refined flours. The presence of bran particles creates a grittier mouthfeel and affects hydration and gluten development differently than white flour. Wholemeal flour varies in protein content (typically 13-14% for bread-making varieties) and grinding coarseness depending on milling specifications.

Wholemeal flour is used extensively in breadmaking, producing dense, flavorful loaves with extended shelf life and superior nutritional value. It is employed in baking cookies, cakes, and pastries, though its bran content requires recipe adjustment and increased liquid to achieve proper texture. In British and European cuisines, wholemeal flour is standard for traditional breads, breakfast porridges, and rustic baked goods. The flour's lower gluten extensibility makes it less suitable for high-rise yeasted breads when used exclusively, so it is often combined with bread flour at ratios of 25-75% wholemeal. Preparation involves adequate hydration and longer fermentation times to develop flavor and improve digestibility.
