About

A cookie sheet (also called a baking sheet or cookie tray) is a flat, rectangular baking pan used for baking cookies, pastries, and other items in an oven. Typically constructed from aluminum, steel, or ceramic materials, cookie sheets are characterized by low or no sides—distinguishing them from sheet pans, which have raised edges. The flat surface allows for even heat distribution and easy access for removing baked goods. Most standard cookie sheets measure approximately 13 x 18 inches (33 x 46 cm), fitting standard domestic ovens, though sizes vary by manufacturer and region.

Culinary Uses

Cookie sheets are essential equipment for baking cookies, crackers, biscuits, and other small baked goods that benefit from even browning on the bottom while maintaining shape. They are also used for roasting vegetables, toasting nuts and seeds, and preparing frozen items such as fries or dumplings. The flat surface and minimal sides allow bakers to easily slide cookies onto cooling racks and facilitate uniform air circulation. Some recipes specifically call for lined cookie sheets (with parchment paper or silicone mats) to prevent sticking and improve release, while others may require greasing or use of non-stick surfaces.
