Turbinado sugar is a large-grained, coarse crystalline sugar produced through partial refining of sugar cane juice. The name derives from the turbine used in the centrifugal extraction process. Unlike fully refined white sugar, turbinado retains a thin coating of molasses, giving it a light golden to amber hue and a subtle molasses flavor that is less pronounced than brown sugar. The crystals are significantly larger than standard granulated sugar, making them visually distinctive and providing textural contrast in applications.

Light brown sugar is produced by combining refined white sugar with molasses, typically containing 3.5% molasses by weight, creating a moist, packed granule with a warm golden-brown color. The lower molasses content distinguishes it from dark brown sugar, resulting in a milder, less complex molasses character while retaining the hygroscopic properties that keep the product naturally moist.

Culinary Uses

Turbinado sugar is prized for its decorative, crunchy crystals and is commonly used as a finishing sugar for baked goods, beverages, and desserts, where its appearance and textural contrast are valued. It dissolves more slowly than granulated sugar and is excellent for rim applications on cocktails and in recipes where crystals should remain distinct. Light brown sugar is widely used in baking, contributing moisture and depth of flavor to cookies, cakes, and brownies; it is also common in savory applications, sauces, glazes, and marinades where its molasses undertones complement spice profiles. Both sugars can replace white sugar in most recipes, though turbinado's slow dissolution makes it less suitable for applications requiring complete incorporation.
