Shoyu, commonly known as soy sauce in English, is a fermented liquid condiment derived from soybeans, grain (typically wheat), salt, and koji (a fermentation culture). Originating in China over 2,000 years ago and refined in Japan, shoyu represents one of the most fundamental seasonings in East Asian cuisines. The ingredient is produced through a months-long fermentation process in which soybeans and grain are inoculated with koji mold, mixed with brine, and aged in wooden or ceramic vessels, developing complex umami flavors and a dark brown color. Japanese shoyu varieties include koikuchi (dark, all-purpose), usukuchi (lighter, used in lighter-colored dishes), tamari (wheat-free, thicker), and shiro (pale, sweet). Chinese soy sauces tend to be darker and sometimes saltier than their Japanese counterparts.

Culinary Uses

Soy sauce functions as a primary seasoning and flavor enhancer across East and Southeast Asian cuisines, valued for its savory umami depth and salty character.
