Sweet corn (Zea mays var. saccharata) is a cultivar of maize selected for its elevated sugar content and tender kernel texture, originating from genetic mutations in standard field corn. The kernels are harvested before full maturity, typically 20 days after pollination, when the endosperm retains high moisture and sugar levels rather than converting to starch. Sweet corn varieties display a range of kernel colors—yellow, white, bicolor, and occasionally red or purple—and possess a tender pericarp that ruptures easily when cooked. The flavor is distinctly sweet and milky, with buttery notes that develop fully only hours after harvest, as sugars convert to starch over time.

There are three main genetic types: su (sugary), se (sugar-enhanced), and sh2 (shrunken-2, or supersweet), each with distinct sweetness levels, kernel texture, and post-harvest starch conversion rates. Supersweet varieties retain sweetness for longer after harvest due to altered starch metabolism.

Culinary Uses

Sweet corn is enjoyed across numerous cuisines as a vegetable side dish, typically boiled, grilled, or steamed with butter and salt. The kernels are stripped from the cob and incorporated into soups (particularly corn chowder), salads, grain bowls, and Mexican dishes such as esquites and elote. Fresh corn is also creamed, made into bisques, and used in succotash preparations paired with lima beans and peppers. In Asian cuisines, corn appears in stir-fries and as a topping for rice and noodles. The kernels can be charred for depth or puréed into polenta-adjacent preparations. Grilled corn in the husk delivers smoky sweetness, while canned and frozen kernels extend usability year-round.
