superfine sugar for sprinkling

SweetenersYear-round

Superfine sugar is essentially pure carbohydrate (sucrose) providing approximately 4 calories per gram; it contains no significant vitamins, minerals, or fiber.

About

Superfine sugar, also known as caster sugar or castor sugar, is a refined granulated sucrose product with grains significantly smaller than standard granulated sugar. Produced through the crystallization and grinding of sugar cane or sugar beet juice, superfine sugar measures approximately 0.35mm in grain diameter, making it finer and more uniform than conventional table sugar. Its diminutive crystal size allows rapid dissolution and even distribution, properties that distinguish it from coarser granulated varieties. The refined white granules are 99.9% pure sucrose with minimal molasses content, resulting in a clean, neutral sweetness without discernible flavor compounds.

Culinary Uses

Superfine sugar is primarily employed for sprinkling atop baked goods, confections, and desserts where a delicate, quick-dissolving sweetness is desired. Its fine granulation makes it ideal for meringues, whipped cream toppings, and dusted finishes on pastries and cakes, as the small crystals adhere uniformly and melt instantly on the palate. In beverages, particularly cocktails and iced drinks, superfine sugar dissolves rapidly without grittiness. It is also preferred in custards, creams, and sweetened egg white preparations where rapid incorporation and smooth texture are essential.
