Sucanat is a whole-cane sugar product derived from the crystallized juice of sugarcane, made through evaporation and granulation without separation of molasses from the sugar crystals. The name is a trademarked abbreviation of "sugar cane natural." Unlike refined white sugar, sucanat retains the molasses that naturally occurs in sugarcane juice, resulting in a product with a complex brown color and crystalline texture. The ingredient contains approximately 89% sucrose along with trace minerals and organic compounds from the cane, imparting a subtle molasses flavor distinct from white or brown sugars.

Culinary Uses

Sucanat functions as a one-to-one replacement for white or brown sugar in baking, beverages, and cooking applications. Its molasses content makes it particularly suited to recipes where depth of flavor is desired, such as cookies, spice cakes, and caramel preparations. The larger granule size and hygroscopic nature of sucanat require slightly different handling than refined sugars—it may require sifting before measuring and may require minimal adjustment to liquid ratios in certain baked goods.
