The Spanish onion (Allium cepa, Spanish or Valenciano type) is a large, mild, globe-shaped bulb belonging to the amaryllis family, native to central Asia but extensively cultivated in Spain and North America. Also known as a sweet onion or Bermuda onion, it is distinguished by its golden-tan papery skin, large size (often 3-4 inches in diameter), and high sugar content (typically 5-12% by weight), which renders it considerably sweeter and less pungent than common yellow onions.

The variety develops its characteristic sweetness through cultivation in sulfur-poor soils, which limits sulfur uptake and reduces the volatile compounds responsible for onion's characteristic sharp bite. Spanish onions have a tender, moist texture and mild, almost sweet flavor when raw, which intensifies and becomes caramelized when cooked.

Culinary Uses

Spanish onions are prized for raw applications such as salads, salsas, and sandwiches due to their mild flavor and crisp texture. Their natural sweetness and low astringency make them ideal for caramelization, appearing prominently in soups (particularly French onion soup), stews, and roasted vegetable dishes. In Mediterranean and Spanish cuisines, they feature in soffritos, paella bases, and escabeche preparations. The large, sturdy rings are excellent for grilling and roasting whole, and their sweetness complements both meat and vegetable dishes without overpowering delicate flavors.
