smooth peanut or cashew butter

Nuts & SeedsYear-round. Both peanuts and cashews are harvested seasonally in their regions of origin, but processing and industrial production ensure consistent availability of butter year-round in most markets.

Rich in plant-based protein, healthy monounsaturated fats, and vitamin E; cashew butter typically contains higher levels of minerals such as copper and magnesium, while peanut butter provides additional niacin and resveratrol antioxidants.

About

Peanut and cashew butters are finely ground pastes made from roasted legumes (peanuts) or tree nuts (cashews) that have been mechanically processed into a smooth, spreadable consistency. Peanut butter is derived from the Arachis hypogaea plant, native to South America, while cashew butter comes from the seeds of the Anacardium occidentale tree, native to northeastern Brazil. Both are characterized by their creamy texture, rich fat content, and mild, nutty flavor. Smooth varieties differ from chunky versions in that the nuts are ground into an extremely fine paste without visible nut particles, resulting in a uniform, homogeneous consistency. Commercial smooth butters often contain added oils and stabilizers to maintain consistency, while natural versions may contain only the ground nuts with minimal processing.

Culinary Uses

Smooth peanut and cashew butters serve as versatile ingredients across both sweet and savory applications. In North American cuisine, they are commonly spread on bread, incorporated into sandwiches, or used as a base for sauces and dressings. In Asian cuisines, particularly Southeast Asian cooking, peanut butter appears in satay sauces, curries, and noodle dishes, while cashew butter is prominent in Indian desserts and cream-based sauces. Both butters function as binders in baked goods, protein sources in smoothies and breakfast dishes, and creamy components in savory soups and stews. They pair well with chocolate, fruit (especially bananas and apples), and complementary flavors such as soy sauce, lime juice, and chili.
