Silken tofu (also called soft tofu or kinugoshi in Japanese) is a custard-like curd product made from soy milk through a traditional process that coagulates the milk without pressing. Unlike firm tofu varieties, silken tofu retains most of its moisture content, resulting in a delicate, smooth texture with a subtle, slightly sweet flavor. The product originates from China but became widely established in Japanese cuisine and is now fundamental to East and Southeast Asian cooking. Silken tofu contains approximately 88-90% water, with the remaining solids consisting primarily of soy protein, lipids, and carbohydrates.

The manufacturing process involves adding coagulants (such as nigari, gypsum, or glucono delta-lactone) directly to hot soy milk in the setting container, allowing the curds to coagulate gently without the cutting and pressing steps required for firmer varieties. This minimal processing preserves the characteristic silky mouthfeel and creamy consistency.

Culinary Uses

Silken tofu is prized for its delicate texture and is best used in applications where creaminess and subtle flavor are desired rather than structural integrity. It features prominently in Japanese miso soups, where whole blocks dissolve gently into the broth, and in Chinese preparations such as agedashi tofu and mapo tofu. The ingredient is essential to Southeast Asian desserts and beverages, including silken tofu smoothies and sweetened preparations. Due to its high moisture content, silken tofu works exceptionally well in blended preparations such as sauces, dressings, smoothies, and cheesecake-style desserts, where it adds creaminess and protein without a grainy texture. It is typically not pan-fried or pressed, as its delicate structure cannot withstand such handling.
