The plant produces small, disk-shaped seeds that are typically pale yellow, though red and black varieties exist. The seeds are encased in a bitter saponin coating that must be removed through rinsing before consumption. Quinoa has a mild, slightly nutty flavor and a delicate, fluffy texture when cooked, with each grain remaining visibly distinct rather than becoming mushy.
