About

Quick dissolving sugar, also known as superfine sugar, caster sugar, or baker's sugar, is granulated sucrose that has been processed into exceptionally fine crystals. Produced by grinding standard granulated sugar to a much smaller particle size (approximately 0.3mm), it retains the same chemical composition as regular sugar but dissolves rapidly in liquids and batters without the grittiness of conventional granulated sugar. The finer crystal structure allows for faster dissolution and more uniform distribution throughout liquid mixtures and doughs.

This ingredient is chemically identical to granulated sugar but engineered for convenience and superior incorporation in recipes requiring swift dissolution. It is particularly valued in applications where undissolved sugar crystals would negatively affect texture or mouthfeel.

Culinary Uses

Quick dissolving sugar is essential in beverages, particularly cold drinks and cocktails, where it dissolves instantaneously without the cloudiness or grittiness that larger crystals create. In baking, it produces exceptionally fine, tender crumbs in cakes, cookies, and meringues by incorporating more evenly into batters and egg foams. It is the preferred sugar for whipping egg whites into meringues and for making frostings and buttercreams, as it dissolves completely into these structures, creating a silken texture. Additionally, it is ideal for dusting desserts, making simple syrups, and preparing frozen desserts and sorbets.
