pkg. lime gelatin

SweetenersYear-round. Packaged gelatin is a shelf-stable, processed ingredient available consistently throughout the year.

Gelatin provides collagen-derived protein and is virtually fat-free; however, sweetened lime gelatin products are primarily composed of added sugars and offer minimal micronutrients. Unsweetened or reduced-sugar versions are available as alternatives.

About

Lime gelatin is a powdered dessert gelling agent flavored with lime and sweetened with sugar or artificial sweeteners. Gelatin itself is a colorless, odorless protein derived from collagen, traditionally extracted from animal bones and connective tissue through hydrolysis. Lime-flavored gelatin represents a commercially standardized mix combining gelatin with citric acid for tartness, lime flavoring (natural or synthetic), food coloring, and sweeteners. When hydrated with hot water and allowed to set, the gelatin proteins form a thermoreversible gel matrix, creating the characteristic jiggling texture. Lime gelatin is typically sold in individual envelopes or small boxes as an instant preparation requiring only hot water and refrigeration to prepare.

Culinary Uses

Lime gelatin is widely used in American and international cuisine for molded desserts, aspics, and suspended ingredient preparations. It features prominently in retro and traditional recipes such as lime Jell-O salads (often combined with vegetables, fruits, or cottage cheese), chilled mousses, and layered desserts. The tart flavor complements both sweet and savory applications; lime gelatin can be paired with tropical fruits like pineapple, coconut, and mango, or incorporated into cocktail-based aspics. It also serves as a thickening base for whipped cream desserts and can be used to create transparent garnishes or decorative elements in plated desserts.
