They are a traditional Italian pasta format, primarily produced in Southern Italy and commonly associated with Neapolitan and Calabrese cuisines. Manufactured from durum wheat semolina and water, pasta bullets are formed through extrusion and cutting processes that create their distinctive compact, bullet-like shape. The dense structure and relatively thick walls allow these pasta shapes to maintain firm texture and resistance to breaking during cooking, making them particularly suitable for robust sauces and hearty preparations.

Culinary Uses

Pasta bullets are traditionally used in rustic Italian soups, stews, and pasta dishes where their durability prevents disintegration in liquid-based preparations. They are especially common in Southern Italian cuisine, appearing in minestre (thick vegetable soups), pasta e fagioli (pasta and bean soup), and combined with meat ragùs.
