Splenda is a brand-name artificial sweetener based on sucralose, a non-caloric synthetic compound created from sucrose through a multi-step chemical chlorination process. Sucralose was first synthesized in 1976 and approved for use in numerous countries, with the FDA approving it in the United States in 1998. The packets contain sucralose combined with maltodextrin (a bulking agent), cellulose, and dextrose to approximate the volume and handling properties of sugar. Splenda is approximately 600 times sweeter than sucrose, allowing minimal quantities to achieve desired sweetness levels in beverages and recipes.

Splenda packets are designed for convenient single-serving use and dissolve readily in both hot and cold liquids. The product is intended as a direct replacement for table sugar in applications where a non-caloric sweetener is desired, though it does not replicate all the functional properties of sugar in baking, such as browning reactions or textural contributions.

Culinary Uses

Splenda packets are commonly used to sweeten beverages including coffee, tea, and cold drinks without adding calories. In home cooking and baking, they serve as a sugar substitute, though with important caveats: sucralose does not caramelize or participate in Maillard reactions like sugar does, limiting its use in applications requiring browning or textural development from sugar's hygroscopic properties. The packets are less suitable for recipes where sugar's structural role is essential (meringues, custards, jams), but work acceptably in beverages, yogurt, and some baked goods when combined with other ingredients that provide texture.
