Extra firm tofu is a processed soy product manufactured by coagulating soy milk and pressing the resulting curd into blocks of varying densities. Originating in China over 2,000 years ago, tofu arrived in Japan during the 8th century and became fundamental to East Asian cuisines. Extra firm varieties are pressed under greater weight to remove maximum moisture, resulting in a dense, compact texture with minimal porosity. This form contains approximately 85-90% less water than silken tofu, yielding a firmer, more substantial crumb structure that closely resembles pressed cheese. The flavor is mild and slightly earthy, allowing it to absorb surrounding ingredients readily.
Culinary Uses
Extra firm tofu is valued for its structural integrity and ability to withstand high-heat cooking methods including stir-frying, deep-frying, grilling, and pan-searing without disintegrating. It is the preferred choice for dishes requiring tofu to maintain distinct shape and texture, such as mapo tofu, agedashi tofu, and vegetable stir-fries. Its dense texture allows it to brown and develop caramelized exteriors effectively.
