The production process involves cooking soybeans, inoculating them with Aspergillus oryzae, fermenting the mixture for months to years, and aging in wooden or ceramic vessels. The result is a thick, umami-rich paste ranging in color from pale beige to deep brown, depending on fermentation duration, ingredients, and regional tradition.

Regional variants include Japanese miso (ranging from sweet, white miso to robust, dark red or black varieties), Chinese doubanjiang (typically spicier and more pungent), and Korean doenjang (earthier and more assertive). The fermentation process develops complex amino acid profiles, particularly glutamates, which contribute the characteristic savory depth.
