Protected by Denominazione di Origine Controllata (PDO) designation, true Parmigiano-Reggiano is produced from the milk of specific cattle breeds (Pezzata Rossa, Bruna Italiana, and others) fed non-GMO forage. The cheese is aged for a minimum of 24 months, though premium versions are aged for 36 months or longer. Its texture is granular and crystalline, with a natural golden hue. The flavor profile evolves with age: younger cheeses (24 months) exhibit a milder, buttery taste, while aged versions develop complex, umami-rich notes with hints of nuttiness and caramel. The cheese is characterized by visible protein crystals (calcium lactate) that create a slight grittiness when bitten, a hallmark of authentic Parmigiano-Reggiano.
