Castor sugar, also known as caster sugar or superfine sugar, is a refined white sugar with exceptionally fine, uniform crystals smaller than standard granulated sugar. Produced from sugar cane or sugar beets, castor sugar is created through crystallization and grinding processes that reduce particle size to approximately 0.5mm. The name derives from the cast-iron pans historically used in its production. It dissolves rapidly in liquids and creams efficiently with butter, making it distinct from coarser granulated sugars. The fine crystal structure remains largely undetectable on the palate, providing a smooth sweetness without grittiness.

Castor sugar is chemically identical to granulated sugar (sucrose) and contains no molasses or other additives, distinguishing it from brown sugars and muscovado varieties.

Culinary Uses

Castor sugar is the preferred sweetener in baking, particularly for cakes, pastries, meringues, and whipped desserts where rapid dissolution and smooth texture are essential. Its fine crystals cream easily with butter in the creaming method, incorporating air for lighter cake crumbs. It is standard in British baking, custards, and cream-based desserts.
