Aspartame is a dipeptide methyl ester (L-aspartyl-L-phenylalanine methyl ester) created through the chemical synthesis of two amino acids; it is approximately 200 times sweeter than sucrose by weight. Maltodextrin, a polysaccharide derived from corn, rice, or potato starch, serves as a bulking agent to provide the product with a volume and texture comparable to granulated sugar, making it suitable for one-to-one substitution in many applications.
