Rice is the starchy endosperm of grass species belonging to the genus Oryza, primarily Oryza sativa, native to Asia and cultivated for over 8,000 years. The grain consists of the kernel protected by an inedible husk, and exists in three main milling stages: brown rice (bran and germ intact), white rice (bran and germ removed), and parboiled rice (partially cooked before milling). Major long-grain varieties include jasmine and basmati; medium-grain types include arborio and sushi rice; and short-grain varieties like shari feature higher starch content and greater adhesion when cooked.\n\nRice flavor is subtle and slightly nutty, particularly in brown and aromatic varieties. The texture upon cooking depends on starch composition—amylose-rich varieties remain separate, while amylopectin-dominant types become creamy and cohesive. Regional cultivation and processing methods produce distinctive characteristics: Thai jasmine rice carries floral aromatics, Italian arborio develops a creamy risotto consistency, and Japanese sushi rice achieves ideal stickiness for grain adhesion.

Rice serves as a staple carbohydrate base across Asian, Latin American, African, and Mediterranean cuisines. It is prepared through boiling, steaming, pilaf-style cooking, or risotto methods, and forms the foundation of dishes including congee, pilau, fried rice, paella, and bibimbap.
