Noilly Prat Dry is a dry vermouth produced in Marseillan, France, classified as an aromatized fortified wine. Created in 1786 by Joseph Chavasse, it is produced from a base of white wine fortified with distilled alcohol and infused with a proprietary blend of botanicals including camomile, savory, anise, and other herbs and spices. The recipe remains closely guarded, though it is known to incorporate around 40 different herbs, roots, seeds, and flowers.

The spirit is characterized by its pale golden color, herbal and citrus-forward aromatic profile, and dry finish with subtle notes of wormwood and anise. Noilly Prat Dry is the original and most traditional dry vermouth, establishing the standard for the category and remaining legally protected by appellation d'origine contrôlée (AOC) regulations.

Culinary Uses

Noilly Prat Dry is primarily used as a cocktail ingredient and aperitif rather than a cooking ingredient, though it occasionally appears in classical sauce preparations. Its principal role is in the formulation of the Martini cocktail, where it constitutes a critical aromatic component that defines the drink's character. The vermouth is also used in other classic aperitifs and mixed drinks such as the Manhattan (traditionally with sweet vermouth), the Negroni, and the Martinez.
