This base mixture is typically set in starch-dusted molds or sheets, then cut into uniform pieces and coated with powdered sugar and cornstarch to prevent sticking. Miniature marshmallows are the downsized version of standard marshmallows, measuring approximately 0.5 inches in diameter, while large marshmallows are roughly 1.5 to 2 inches. The white varieties dominate commercial production, though colored and flavored variants are increasingly available. The texture is characterized by a pillowy exterior yielding to a slightly sticky interior, with a clean vanilla flavor that serves as a neutral sweetening agent.

Modern marshmallows emerged in 19th-century France as a confection made from the marshmallow plant (Althaea officinalis) root extract, though contemporary versions dispense with the plant entirely. The whipping process creates a foam structure with thousands of air pockets, giving marshmallows their distinctive density and mouthfeel. When heated, the gelatin weakens and marshmallows collapse or melt, releasing their sweetness.

Large marshmallows dominate s'mores preparation, roasted over open flame until the exterior caramelizes and the interior becomes molten. Both sizes appear in Rice Krispie treats, fudge recipes, and layered desserts. Marshmallows can be melted and incorporated into frostings, nougat centers, or mousse-like desserts, or toasted briefly under a broiler for a browned exterior. Their neutral sweetness makes them compatible with chocolate, coffee, vanilla, and fruit flavors.
