Botanically a fruit—specifically a berry—it is conventionally treated as a vegetable in the kitchen. Medium-sized zucchini typically measure 6–8 inches in length and are characterized by smooth, thin skin ranging from dark green to pale green, with firm, pale flesh dotted with small, edible seeds. The flavor is mild and slightly nutty when raw, becoming more delicate and subtle when cooked. Peak varieties include Black Beauty, Costata Romanesco (with characteristic ridged skin), and Golden zucchini, though standard dark green cultivars dominate commercial production.

Zucchini is exceptionally versatile and employed across numerous cuisines. Raw, it appears in slaws, salads, and carpaccio; when cooked, it is sautéed, grilled, roasted, or stuffed. It is central to Italian caponata, French ratatouille, and Greek saganaki. Zucchini's neutral flavor makes it an ideal vehicle for aromatics such as garlic, oregano, and basil. The vegetable may be grated and incorporated into batter for fritters or baked goods, spiralized into noodle-like strands as a pasta substitute, or hollowed and filled with grains and proteins.
