The red onion (Allium cepa var. rubrum) is a bulbous vegetable belonging to the Amaryllidaceae family, characterized by papery dark red or purple outer skin and layered white flesh streaked with red-purple pigmentation. Medium-sized red onions typically measure 2.5–3.5 inches in diameter and weigh 150–250 grams. Red onions derive their coloration from anthocyanin pigments, which give them a sweeter, milder flavor profile compared to yellow onions, with subtle fruity and sulfurous notes that become more pronounced when raw. The flavor mellows considerably upon cooking, developing a caramelized sweetness. Cultivars such as Red Burgundy, Red Wing, and Walla Walla are widely grown for commercial use.

Red onions are used extensively in raw applications where their visual appeal and milder flavor are valued—particularly in fresh salsas, pickled preparations, salads, and ceviche. Their sweetness and lower pungency make them ideal for caramelization and use in cooked dishes such as French onion soup, stews, and roasted vegetable preparations. In global cuisines, red onions appear prominently in Indian curries, Middle Eastern fattoush, Latin American soffritos, and Mediterranean dishes. They are commonly sliced thin for raw applications or diced for cooked preparations; cooking tames their bite while enhancing their natural sugars. Red onions pair well with acids (citrus, vinegar), lean proteins, and herbs such as cilantro and parsley.
