Lobster tails are the abdominal sections of lobsters, primarily from cold-water species of the family Nephropidae, with the most commercially significant being the American lobster (Homarus americanus) and European lobster (Homarus gammarus). The tail comprises the muscular abdomen encased in a segmented exoskeleton, containing sweet, tender meat prized for its delicate flavor and firm texture. The meat is characterized by a subtle brininess and slight sweetness, with a composition that becomes firmer when cooked. Lobster tails are often sold frozen, either whole or split lengthwise, and may be sourced from cold Atlantic and Pacific waters; spiny lobsters (Palinuridae) from warmer waters are also sold as "lobster tails" but lack the large claws found on true lobsters.
