Riesling is a white wine produced from the Riesling grape (Vitis vinifera subsp. vinifera), a variety originating in the Rhine Valley of Germany during the 15th century. The wine exhibits a pale to golden hue depending on age and production method, with characteristic aromas ranging from floral and fruity to mineral and honey-like notes. Riesling ranges in style from bone-dry to richly sweet, determined by residual sugar content and the timing of harvest. The grape's high acidity and potential for noble rot (Botrytis cinerea) enable production of both dry table wines and concentrated dessert wines. Key regions include Germany, Alsace (France), Austria, and increasingly Australia and New Zealand.

Culinary Uses

Riesling functions both as a standalone aperitif and as a versatile cooking wine and table wine. In the kitchen, its acidity and subtle sweetness make it valuable for deglazing pans, reducing into sauces for fish and poultry, and creating wine-based vinaigrettes. It pairs exceptionally well with Asian cuisines, particularly Thai and Vietnamese dishes where its slight sweetness and acidity complement spice, heat, and umami flavors. At table, it accompanies shellfish, lighter fish preparations, aromatic dishes, and fruit-based desserts. German kabinett and spätlese styles work particularly well with German and Alsatian charcuterie and pâtés.
