About

Kulikuli is a roasted peanut brittle or snack made from ground peanuts mixed with spices, salt, and sometimes grains, formed into balls, cakes, or irregular nuggets, and deep-fried or baked until golden and crispy. Originating in West Africa, particularly Nigeria, kulikuli represents a traditional method of processing and preserving peanuts that were domesticated in South America but became culturally embedded in Saharan and sub-Saharan regions. The texture is distinctly crunchy and dense, with a nutty, savory flavor profile enhanced by the addition of spices such as ginger, cayenne pepper, and sometimes locust bean powder (dawadawa). Regional variations exist throughout West Africa, with differences in spice ratios, binder ingredients, and whether palm oil or other fats are incorporated into the mix.

Culinary Uses

Kulikuli functions as both a street food snack and a protein-rich accompaniment to meals, commonly consumed alongside drinks, as a standalone snack, or crumbled over rice dishes and soups. In Nigerian cuisine, it is particularly prominent as a packaged snack sold in markets and along roadways. The ingredient can also be ground further into a powder to enrich sauces, stews, and porridges with nutty depth and nutritional content. Its versatility extends to being paired with fresh lime juice or served as a crunchy textural component in salads, making it valuable in both traditional and contemporary West African cooking.
