jalapeño chile

ProducePeak season extends from late spring through early fall (June-September) in North America, though jalapeños are increasingly available year-round in major markets due to global cultivation and greenhouse production.

Jalapeños are rich in vitamin C and contain capsaicin, a compound with anti-inflammatory and antioxidant properties. They are low in calories (approximately 29 per 100g) and provide modest amounts of vitamin A, potassium, and dietary fiber.

About

The jalapeño (Capsicum annuum var. annuum) is a medium-sized chili pepper native to Mexico, specifically the Veracruz region. The fruit typically measures 5-10 centimeters in length and has a distinctive thick-walled, pod-like structure with a glossy, smooth skin ranging from green to deep red as it matures. The flavor profile combines moderate heat (2,500-8,000 Scoville Heat Units) with vegetal, slightly fruity undertones and a crisp texture when fresh.

Jalapeños are versatile in their ripeness applications: immature green jalapeños offer grassy, herbaceous notes and firm texture, while fully ripened red jalapeños develop sweeter, fruitier characteristics. The pepper's thick flesh makes it suitable for both raw consumption and cooking, and it remains a staple ingredient in Mexican cuisine and has become integral to North American and global cooking traditions.

Culinary Uses

Jalapeños function across multiple culinary applications and cuisines. In Mexican cuisine, they appear stuffed (chiles rellenos), pickled (en escabeche), in salsas, or sliced fresh into tacos and ceviches. North American preparations include nachos, poppers (breaded and fried), and as a pizza topping. The peppers are used in Asian fusion cuisine, added to marinades, and incorporated into compound butters and cream sauces. Both raw and cooked applications are common; raw jalapeños provide crispness and fresh heat to dishes, while roasting or grilling mellows the heat and develops sweetness. They pair effectively with cheeses, meats, beans, lime, cumin, and cilantro.
