An inch tube pan is a round baking vessel with a hollow cylindrical tube (or chimney) projecting from the center of the base. The tube extends upward through the middle of the pan, creating a ring-shaped batter cavity around it. This design, which emerged in the 19th century and became standardized in the early 20th century, serves multiple functional purposes: the central tube conducts heat to the interior of dense batters, promotes more even baking, and provides structural support for tall, delicate cake structures. Tube pans are typically 9 or 10 inches in diameter and 3 to 4 inches deep, with a removable base that allows the finished cake to be inverted and released without damage.

Culinary Uses

Tube pans are indispensable for baking angel food cakes, chiffon cakes, and other high-rising foam cakes that rely on aeration and upward rise for their characteristic light, tender crumb structure. The tube's heat-conducting function is particularly important for these delicate batters, which would otherwise bake unevenly on the exterior while remaining raw in the center. The pan is also used for bundt-style cakes, pound cakes, and coffee cakes where a decorative ring shape is desired. The removable base design is essential for releasing these cakes intact, as their delicate structure makes traditional pan-tapping removal methods risky.
