About

Crushed ice is frozen water that has been mechanically broken or shattered into small, irregular fragments. Unlike whole ice cubes or shaved ice, crushed ice consists of larger pieces (typically 1/4 to 1/2 inch) that occupy more volume relative to their mass, creating air pockets between fragments. The crystals retain their hardness while presenting an increased surface area, making crushed ice ideal for rapid chilling without the fine texture of shaved ice or the bulk of whole cubes. The formation involves freezing purified or tap water and then fracturing it through impact or pressure.

Crushed ice occupies a middle ground in ice preparations: denser and colder than shaved ice, yet smaller and faster-chilling than whole cubes. Its texture and structure make it particularly suited to applications requiring efficient thermal transfer and ease of consumption.

Culinary Uses

Crushed ice is essential in mixology, serving as the primary ice form for daiquiris, margaritas, mojitos, and frozen cocktails where rapid chilling and easy sipping are priorities. In beverage service, it chills drinks faster than cubes while remaining less dilution-prone than shaved ice. Beyond cocktails, crushed ice is used in food preparation for chilling seafood displays, preserving delicate produce, and creating granita-like frozen desserts. It is also employed in smoothie preparation, iced coffee and tea drinks, and medical/therapeutic applications such as ice therapy for injuries.
