Sugar is a simple carbohydrate composed primarily of sucrose, a disaccharide formed from glucose and fructose. Derived most commonly from sugarcane (Saccharum officinarum) and sugar beets (Beta vulgaris), sugar is extracted, refined, and crystallized into granulated form. The refining process involves crushing the source material, extracting the juice, and purifying it through crystallization to produce white granulated sugar, the most common culinary form. Sugar crystals are white to translucent, highly soluble in water, and possess a distinctly sweet taste with no flavor notes beyond sweetness itself.

Different varieties exist based on crystal size and processing: granulated sugar (standard), superfine (caster) sugar with smaller crystals for baking, turbinado and demerara with larger crystals and molasses notes, and muscovado with higher molasses content and moisture. Each variety exhibits slightly different properties affecting texture and sweetness intensity in finished dishes.
