Guava paste, known as pasta de guayaba in Spanish or goiabada in Portuguese, is a thick, dense confection made from guava pulp and sugar, cooked until it achieves a spreadable or sliceable consistency. Originating in tropical regions of the Americas—particularly Mexico, Brazil, and the Caribbean—guava paste is derived from the fruit of Psidium guajava, a tropical shrub producing small, round fruits with cream to pink flesh. The paste ranges in color from deep red to brown, depending on the guava variety and cooking duration, and has a distinctly sweet, slightly tart, and musky flavor characteristic of cooked guava.

The production process involves cooking guava pulp with sugar until it reaches a gel-like state through pectin concentration and caramelization. Some formulations include citric acid or pectin to control texture. The result is a preserve-like substance that can range from spreadable (softer consistency) to firm enough to slice and serve as candy.

Culinary Uses

Guava paste is primarily used as a sweet spread for bread, crackers, and pastries, and is particularly popular in Latin American and Caribbean cuisines. It serves as a filling for pastries, empanadas, and alfajores, and is often paired with cheese—notably queso fresco or manchego—creating the classic combination known as guava and cheese (known as "guava y queso").
