About

Green cardamom (Elettaria cardamomum) is a small, ribbed pod containing aromatic seeds native to the Western Ghats of southern India and now cultivated throughout tropical regions, particularly in Guatemala, India, and Indonesia. The pods are approximately 1–2 cm in length, featuring a thin, pale green to yellowish-green papery husk that encloses a chamber filled with small black seeds. The seeds possess a warm, complex flavor profile with eucalyptus, minty, and slightly floral notes, with pronounced aromatic volatiles including 1,8-cineole, linalool, and limonene.\n\nGreen cardamom is distinguished from black cardamom (Amomum subulatum) by its size, color, and flavor—black cardamom being larger, darker, and smoky in character. The spice is typically used whole or the seeds are extracted and ground, as the pod itself contributes additional flavor compounds through its essential oils.

Culinary Uses

Green cardamom is one of the most versatile spices in global cuisine, central to Indian, Middle Eastern, Scandinavian, and Southeast Asian cooking traditions. In Indian cuisine, it is essential to garam masala blends, curries, and biryanis, as well as chai and other spiced beverages. Throughout the Middle East and North Africa, it flavors coffee, sweets, and savory rice dishes. Scandinavian bakers incorporate it into breads, pastries, and cookies. The spice pairs well with other warm spices (cinnamon, cloves, nutmeg), as well as with citrus, chocolate, and vanilla. It can be used whole to infuse liquids or crushed to release seeds for grinding, and works in both sweet and savory applications.
