Green bell pepper (Capsicum annuum) is the unripe fruit of the common pepper plant, harvested before maturity and characterized by a thick-walled, hollow structure with a distinctive blocky shape. Native to Central and South America, green bell peppers are botanically berries but culinarily classified as vegetables. The pepper has a firm, waxy skin with four or five lobes, and a crisp, mild vegetable flavor with slight grassiness and subtle bitterness. The interior contains a fibrous placenta studded with small seeds that can be easily removed. Unlike their mature counterparts (red, yellow, or orange), green peppers are harvested before full ripening, which accounts for their slightly vegetal taste and superior structural integrity when cooked.

Green bell peppers are among the most versatile vegetables in global cuisine, used both raw in salads and pickled preparations, and cooked in stir-fries, sautés, braises, and roasted dishes. They form part of the "holy trinity" of Cajun cooking (with onions and celery), are essential to soffritto in Italian cuisine, and appear in Spanish, Greek, and Middle Eastern preparations.
