Granulated beet sugar is crystallized sucrose derived from sugar beets (Beta vulgaris ssp. vulgaris), herbaceous plants native to the Mediterranean region. The production process involves extracting juice from beets, purifying and concentrating it through evaporation, then crystallizing and centrifuging to produce fine granules chemically identical to cane sugar. The extraction and refining process removes virtually all non-sucrose components, yielding a white crystalline product with a neutral flavor and uniform granule size typically ranging from 0.5 to 2 millimeters.

Sugar beet cultivation expanded significantly in Europe and North America during the 19th century as a response to trade barriers affecting cane sugar. Today, beet sugar represents approximately 25% of global sugar production and is the primary source of refined sugar in Europe and North America. The granules are indistinguishable from cane sugar in both appearance and chemical composition, as both consist of at least 99.5% pure sucrose.

Culinary Uses

Granulated beet sugar functions identically to cane sugar across all culinary applications, serving as a sweetener in baked goods, beverages, confections, preserves, and desserts. It dissolves readily in both hot and cold liquids, creams effectively with fats for cookie and cake batters, and caramelizes at the same temperature as cane sugar. In industrial and home cooking, beet sugar is used for general sweetening, syrup production, candy-making, and fermentation applications. Its neutral flavor profile makes it suitable for any recipe calling for white granulated sugar without imparting any distinctive taste.
