The cherries are progressively moved through syrups of increasing sugar concentration over several days or weeks, allowing them to gradually absorb sugar while retaining their shape and firmness. The final product is a glossy, jewel-like fruit with a crystallized exterior and translucent, chewy interior. Traditional glacé cherries are often dyed bright red, green, or yellow for decorative purposes, though naturally-colored varieties exist. The process preserves the fruit indefinitely while concentrating and sweetening its flavor profile.
