The crystalline substance is composed of sucrose molecules and is produced through extraction, purification, and crystallization processes. Granulated sugar, the standard form used in cooking, consists of white crystals approximately 0.5–2 mm in diameter, with a neutral sweet taste and no inherent flavor complexity. Other common varieties include brown sugar (granulated sugar with molasses), turbinado or demerara sugar (larger crystals with molasses coating), and specialty sugars such as muscovado, coconut, or date sugar, each offering varying degrees of moisture content and mineral profiles.

The production of refined white sugar involves pressing cane or beets, clarifying the juice, concentrating it through evaporation, crystallizing the sucrose, and centrifuging to separate crystals from molasses. The molasses is often removed entirely in white sugar production, leaving a pure sucrose product with a shelf life of indefinite duration when kept dry.
