Mori-Nu is a commercial brand (owned by Morinaga Milk Industry) that specializes in packaged tofu using Ultra-High Temperature (UHT) treatment to sterilize the product. The "Lite" designation indicates reduced fat content compared to standard silken tofu, achieved through modified soybean processing. Despite being labeled "firm," this product retains the characteristic smooth, custard-like texture of silken tofu—firmer than soft silken varieties but still considerably more delicate than pressed block tofu. It contains soybeans, water, and nigari (magnesium chloride) as primary ingredients, with the firm variant containing slightly more coagulant to achieve increased structural integrity.
