About

Equal® Spoonful is a tabletop sweetener produced by Merisant Company, composed primarily of aspartame, a dipeptide methyl ester created from the amino acids aspartic acid and phenylalanine. The product also contains dextrose and maltodextrin as bulking agents to approximate the volume and texture of granulated sugar, allowing a single spoon of Equal® Spoonful to provide sweetness equivalent to one teaspoon of sugar. Aspartame is approximately 200 times sweeter than sucrose by weight, necessitating the addition of bulking agents to achieve comparable measurements in culinary applications. The formulation is intended for direct substitution in beverages and recipes without volume adjustment.

Culinary Uses

Equal® Spoonful is used as a zero-calorie or reduced-calorie sweetening agent in hot and cold beverages, including coffee, tea, and cold drinks, as well as in home baking and cooking where sugar reduction or complete sugar substitution is desired. It dissolves readily in both hot and cold liquids, making it suitable for table-top sweetening without residual grittiness. In baking applications, users should note that aspartame-based sweeteners may lose some sweetening potency at high temperatures, and results may differ from sugar-sweetened products in terms of browning, texture, and moisture retention.
