env fleischmann's® quick-rise instant yeast

OtherYear-round

Instant yeast is a good source of B vitamins (including thiamine and niacin) and selenium, though quantities per serving are minimal in finished baked goods.

About

Fleischmann's Quick-Rise Instant Yeast is a commercial baker's yeast (Saccharomyces cerevisiae) engineered for rapid fermentation in bread dough and other leavened products. Instant yeast is a dried, granulated form of living yeast cells that have been processed to reduce moisture content and increase surface area, allowing for faster hydration and activation compared to active dry yeast. The characteristic fine granules contain billions of viable yeast cells per teaspoon. This particular formulation includes dough conditioners and enzymes that accelerate the rising process, reducing fermentation time by approximately 25% compared to standard active dry yeast. The yeast produces carbon dioxide gas through anaerobic fermentation of sugars, creating the rise in dough.

Culinary Uses

Fleischmann's Quick-Rise is used primarily in bread baking—including sandwich breads, dinner rolls, pizza dough, and sweet doughs—where reduced proofing time is advantageous. It can be mixed directly into dry ingredients (without hydration) or bloomed in warm water before incorporation. The yeast is suitable for both hand-kneaded and machine-mixed doughs, though it performs particularly well in bread machines. It is also used in sweet dough applications such as cinnamon rolls and coffee cakes. While the formulation is optimized for speed, it may produce slightly less complex flavor development than longer fermentation times with standard yeast, making it best suited to applications where convenience takes priority over artisanal depth.
