Arrowroot, botanically known as Maranta arundinacea, is a tropical perennial plant native to South America whose rhizomes yield a refined starch. The plant produces long, slender leaves and small white flowers, with the starch extracted from underground tubers that are dug, washed, and processed into a fine, white powder. Arrowroot starch is nearly pure carbohydrate, with a neutral flavor and smooth texture. It differs from kudzu (Pueraria montana), an East Asian vine whose starch is similarly extracted but has a slightly different botanical origin and regional significance. Both starches are prized for their neutral taste, fine texture, and superior thickening properties compared to cornstarch.

Arrowroot has been used traditionally in Caribbean and South American cuisines for centuries and was historically valued as a digestible food for infants and convalescents in Western medicine.

Culinary Uses

Arrowroot starch serves as a superior thickening agent for sauces, gravies, puddings, and fruit glazes, particularly in delicate preparations where cornstarch's cloudiness or egg's richness would be undesirable. It produces clear, glossy sauces and thickens at lower temperatures than cornstarch, making it ideal for heat-sensitive applications.
