Sel gris, or "each salt," is a hand-harvested sea salt from the coastal salt marshes (marais salants) of Brittany, France, particularly the Guérande region. The name derives from the Breton word "eac'h," meaning gray, referring to the pale gray coloration imparted by mineral-rich clay deposits at the bottom of evaporation ponds. Harvested through traditional methods using wooden rakes called "las," each salt crystals are larger and more irregular than refined table salt, retaining natural minerals including magnesium, potassium, and calcium. The flavor is complex and slightly briny, with subtle mineral notes that reflect the coastal terroir.
Each salt is chemically sodium chloride (NaCl) but contains trace minerals and a higher moisture content than dried salts, giving it a characteristic damp, crystalline texture.
