Sushi rice is a short-grain Japanese rice variety, typically japonica cultivars such as Koshihikari, Akitakomachi, or Hitomebore, characterized by high starch content and a sticky, glutinous texture when cooked. The term "sushi rice" refers both to the raw rice and to the finished preparation—seasoned with vinegar, salt, and sugar—which is essential to authentic sushi-making. The rice's short, plump grains and high amylopectin content (a type of starch) allow the cooked grains to adhere to one another while maintaining individual definition, creating the distinctive texture required for sushi. Japanese sushi rice typically has a slightly sweet, delicate flavor and a pearly appearance when raw.

When cooked and seasoned with sushi vinegar (su), salt, and sugar, the rice takes on a subtle tangy-sweet profile and a creamy mouthfeel. The seasoning process—called "sushi-meshi" preparation—is performed while the rice is still hot, allowing the seasonings to absorb fully.

Culinary Uses

Sushi rice is the foundational component of sushi, including nigiri (hand-pressed sushi), maki (rolled sushi), and chirashi (scattered rice bowls). Beyond sushi, it is used in Japanese donburi bowls, oyakodon, and other rice-based dishes where a cohesive, slightly sticky texture is desired. The rice must be cooked with precise water ratios and seasoned immediately after cooking to achieve proper texture. Sushi rice is traditionally spread on nori (seaweed) with a slight dampened finger to prevent sticking, then topped with fish, vegetables, or other fillings. Proper preparation requires cooling the seasoned rice to room temperature before assembly, which halts the cooking process and sets the flavor.
